Chickpea Hash & Eggs

  • 1 (15.5-ounce) can low-sodium chickpeas, drained, rinsed, and dried

  • 3 tablespoons olive oil, divided

  • ½ teaspoon salt

  • 2 teaspoons smoked paprika

  • 1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley

  • 1 carrot, diced

  • 1 celery stalk, diced

  • ½ medium yellow onion, diced

  • 1 garlic clove, minced

  • ¼ to ½ cup low-sodium vegetable stock

  • Cooking spray (or olive oil)

  • 2 eggs

  • Black pepper

Taco Stuffed Avocados

  • 4 medium avocado

  • 1 medium lime, juice of

  • 1 tablespoon olive oil

  • 1 medium onion, chopped

  • 16 ounce ground beef

  • 1 tablespoon taco seasoning

  • Salt and pepper to taste

  • 2/3 cup Mexican style cheese blend

  • 1/2 cup romaine lettuce

  • 1/2 cup cherry tomatoes

  • 4 tablespoon sour cream

Coconut Crusted Fish

  • 2 lbs grouper (or any white fish with a hearty texture), skinned

  • Whole30 compatible cooking oil (olive or coconut)

  • About 2 cups of coconut flour

  • About 2 cups of unsweetened shredded coconut

  • Salt to taste (1tsp to 1 tbsp) 

  • Pepper if desired

  • 3 eggs
