1 (15.5-ounce) can low-sodium chickpeas, drained, rinsed, and dried

3 tablespoons olive oil, divided

½ teaspoon salt

2 teaspoons smoked paprika

1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley
-
1 carrot, diced
-
1 celery stalk, diced
-
½ medium yellow onion, diced
-
1 garlic clove, minced
-
¼ to ½ cup low-sodium vegetable stock
-
Cooking spray (or olive oil)
-
2 eggs
-
Black pepper
Taco Stuffed Avocados
-
4 medium avocado
-
1 medium lime, juice of
-
1 tablespoon olive oil
-
1 medium onion, chopped
-
16 ounce ground beef
-
1 tablespoon taco seasoning
-
Salt and pepper to taste
-
2/3 cup Mexican style cheese blend
-
1/2 cup romaine lettuce
-
1/2 cup cherry tomatoes
-
4 tablespoon sour cream


Coconut Crusted Fish
-
2 lbs grouper (or any white fish with a hearty texture), skinned
-
Whole30 compatible cooking oil (olive or coconut)
-
About 2 cups of coconut flour
-
About 2 cups of unsweetened shredded coconut
-
Salt to taste (1tsp to 1 tbsp)

Pepper if desired
-
3 eggs
