Egg & Brown Rice Breakfast Bowl

  • 1 teaspoon olive oil, divided

  • ¼ cup chopped zucchini

  • 2 eggs

  • 1 tablespoon low-fat milk

  • ¼ teaspoon of dried oregano

  • Dash of salt and generous grinds of black pepper

  • ½ tablespoon fresh basil leaves, chopped

  • ½ cup cooked brown rice

  • 2 tablespoons canned cannellini beans 

  • ¼ cup sliced grape tomatoes

  • 1 tablespoon crumbled feta cheese

Keto Cheeseburger Lettuce Wraps

  • 6 ounce bacon, chopped

  • 4 ounce cremini mushrooms, sliced

  • 16 ounce ground beef

  • Salt and pepper to taste

  • 4 ounce shredded cheddar cheese

  • 8 ounce Iceberg lettuce leaves

  • 4 ounce cherry tomatoes

Burrito Zucchini Boats

  • 3 Medium Zucchini halved lengthwise

  • 2 Tbsp Olive Oil divided

  • Salt and pepper, to taste

  • 1 Small Onion Diced

  • 2 Garlic Cloves minced

  • 1 Lb Ground Beef

  • ½ Tsp Chili Powder

  • ½ Tsp Ground Cumin

  • ¼ Tsp Paprika

  • ½ Cup Black Beans drained and rinsed

  • ½ Cup Corn fresh frozen or canned

  • 1 Cup Tomato Sauce

  • 1 Cup Shredded Monterey jack cheese
